Saba has been a staple in Italian cooking since the time of the ancient Romans, and is simply made by cooking freshly squeezed grape juice.

Dense and sugary (but not cloying), it goes well with over salads with candied nuts, aged cheeses, polenta and savory focaccia or added to ice cream and yogurt.
