Panforte is a traditional Tuscan cake with origins dating back to the year 1000 when it was known as Christmas Bread, Aromatic Bread, or Panpepato (Spicy Bread). Il Cassero follows the traditional preparation methods, cooking the dough in heated mixers that replicate the old copper cauldrons, combining candied fruit and up to 30% toasted almonds into a smooth mixture. In addition to the classic recipes, Il Cassero also offers modern variations with dried figs and hazelnuts, or chocolate and cherries.
